Recipe makes two servings

Homemade Tomato Soup

  • 1.75lbs fresh roma tomatoes
  • Half head of garlic (3 cloves)
  • 1/2 white onion, rough chopped
  • Livia's Seasoning (or any salt, pepper, & garlic blend)
  • Olive oil
  • 1 cup chicken broth

Fancy Smoked Grilled Cheese Sandwich

  • Sourdough Sandwich Bread
  • Cheese (Gouda and Gruyere are my favorite)
  • Campo Grande thick cut iberico bacon
  • Parsley
  • 1 clove of garlic
  • Kerrygold butter

Directions

Homemade Tomato Soup Instructions

  1. Heat grill or oven to 375 degrees Fahrenheit.
  2. Remove the tomato core and slice tomatoes, garlic, and onion.
  3. Drizzle olive oil onto a FINEX 18" griddle.
  4. Place tomatoes, garlic, onion, & Livia's Seasoning onto the griddle for one hour or until roasted.
  5. Remove the vegetables from the griddle and blend in a food processor or immersion blender.
  6. Pour into a FINEX 1qt sauce pot adding 1 cup of chicken broth and finely chopped basil.
  7. Place back on the grill for additional 30 minutes for extra smoke flavor.

Fancy Smoked Grilled Cheese Sandwich Instructions

  1. Heat grill to 375 degrees Fahrenheit and place a FINEX 18" griddle in the center to preheat.
  2. Make a compound butter by mixing finely chopped parsley, pressed garlic, and butter.
  3. Apply the compound butter to both sides of both bread slices.
  4. Grate cheese if needed.
  5. Weave the bacon into a square and place onto hot FINEX 18" griddle until cooked to desired doneness.
  6. Place a slice of bread on the griddle, add half of the cheese, bacon, the other half of the cheese, and the other slice of bread.
  7. Toast both sides to a perfect golden brown.
  8. Serve with hot homemade tomato soup.
